 Foggy Harbor Chowder

Comforting, hearty, and perfect for a night when the fog rolls in thick as mystery.
Ingredients:

  • 2 tbsp butter
  • 1 small onion, diced
  • 2 cups diced potatoes
  • 1 cup chopped clams or white fish
  • 1 cup corn kernels (fresh or frozen)
  • 2 cups milk or half-and-half
  • Salt, pepper, and a touch of smoked paprika


Directions:
Sauté the onion in butter until translucent. Add potatoes and enough water to cover; simmer until tender. Stir in fish and corn. Add milk, seasonings, and simmer gently for 10 minutes. Don’t boil — just let it thicken while the storm howls outside.
