I have a love affair with the Kentucky Derby. Hats, horses and great food go hand in hand on that day. Each year I put together a menu and invite others to join me for a derby meal. I always serve Kentucky Derby Pie for dessert. It's the best. It is good with or without a dollop of cream.
Kentucky Derby Pie
1 cup sugar
½ cup flour
1 stick melted butter
1 cup chopped pecans
1 cup chocolate chips
1 teaspoon vanilla
Mix all ingredients together and pour into unbaked pie shell. Bake at 350 digresses for 40-45 min. Pie will be brown when done.About Susan Carlisle
