When the three women in Girlfriends on Demand get together for girl talk, they hang out on a patio overlooking the water. The breeze is cool, the sun nice and hot, and their time is their own. While chatting about work, men, and getting paid for love, they nosh on pita pockets stuffed with a rich mix of mayonnaise, shrimp, and fresh mango .
The mango shrimp salad they use to make sandwiches is an easy summer recipe you might enjoy too. The girlfriends stuff it into whole-grain pita bread for finger foods easily consumed while lounging in the sun, but you can serve it over a lettuce or arugula bed instead. Bon appetite!
1 tbsp. olive oil
¼ tsp. sugar
2 large firm mangoes
½ red bell pepper
¼ med onion
1 lb. shrimp, cooked and peeled
½ cup Greek yogurt
¼ cup mayonnaise
1 tbsp. fresh mint, chopped fine
1. Whisk lime juice, olive oil, and sugar
until sugar is dissolved. Set aside.
2. Dice mango into ½ inch chunks.
3. Dice pepper and onion. Dice cooked shrimp. In a large bowl, combine with mango chunks; add lime juice marinade and set aside.
4. In a separate bowl, stir together yogurt and mayonnaise. Stir in chopped mint.
5. Add dressing to shrimp mixture and stir until coated.
6. Chill until serving.
Best if served cold, still fresh. Serve as a sandwich spread or in mounds over lettuce beds.
NOTE: For a lighter version, eliminate the mayo-yogurt mixture and replace with balsamic dressing; pour several tablespoons over mango-shrimp, sprinkle with mint, and toss lightly before serving.
