Hello, dear readers,

Whenever I'm invited here to post a recipe blog, I always have to dig deep. My cooking repertoire extends to macaroni cheese, spaghetti bolognaise and good old English-style bangers, mash and gravy. Anything else generally involves a call out for a firefighter. Lucky, I have a husband who can cook! But the recipe I want to share with you today has a special place in my heart. It’s what my Aunty Maureen used to bake especially for me 😊.

Before we moved to Australia, Sundays were reserved for big family gatherings and a barbecue at Aunty Maureen’s place, and there would always be chocolate coconut squares on the table. Whenever I miss my family 8000km away, I bake these to remind me of the good old days when the cousins and I used to run wild in the backyard, swing off the tarzan swing in the big old tree and pick mulberries until our hands were stained purple. Chocolate Coconut Squares

Shortbread base:
2 cups of flour
2 teaspoons baking powder
240g margarine or butter
2 cups dessicated coconut
8 tablespoons of sugar
A pinch of salt

Method:

Cream butter/marg and sugar together. Add coconut, flour and salt. Press into a swiss roll tin and flatten with a knife. Bake until set and golden brown (about 10-15 minutes at 160 degrees Celsius or 325 degrees Fahrenheit) Remove from oven.
Topping:
2 cups icing sugar
1 teaspoon vanilla
1 tablespoon cocoa
Method:
Mix with a little hot water. Pour topping over baked mix while hot. Cool and cut into squares.

    These sound wonderful. Coconut is hit or miss for me but I can't think of anything that would work better in this recipe.
