Pumpkin Gnocchi with Linda Charles

Hannah McKenna is my heroine in my new book, No Looking Back. She lives in a small rural town and loves horses. Hannah's comfort food is Pumpkin Gnocchi. So I will share the recipe of Pumpkin Gnocchi. 

Recipe:  Pumpkin Gnocchi

Ingredients: 

1 Large pumpkin, cut into chunks
1/2 tsp salt
1/4 tsp ground nutmeg
Salt & Pepper - enough to taste
2&1/2 cups of plain flour
60 grams butter
2 tbspns thyme leaves
Shaved parmesan

Instructions:

Preheat oven to 200 degrees C 
Line a baking tray with grease proof paper
Cut pumpkin into squares and bake in the oven for an hour
Allow to cool
Place pumpkin in a large bowl once cooled and then mash until smooth
Add nutmeg, salt and pepper
Add flour and mix until dough is sticky
Divide into 4 portions
Roll 1 portion into a sausage and then cut the dough into your designed size
Do the same for each roll
Bring a large sauce of salted water to boil
Add the gnocchi in batches and cook uncovered for 2-3 minutes
Heat a large frying pan melt butter and add the thyme leaves and cook for 1-2 minutes
Add the gnocchi and pan fry for 2-3 minutes - stir carefully, until golden brown.
Serve and garnish with Parmesan cheese and thyme.

Linda Charles has been reading romance since high school. Her reading life started very early, but changed direction after she read Gone with the Wind. She was born in Sydney and spent her teenage years in drama classes, and then taught Speech & Drama for many years.  She still loves to go to the theatre, but her plan was always to write. Linda lives in Newcastle and when she's not writing, she can be found walking, browsing the bookshops or planning her next holiday.

  7. I've only eaten pumpkin gnocchi once, at a restaurant and it was delicious! There's something about October that makes me want to have pumpkin and winter squashes as much as possible.
