Simple Jam Recipe
Ingredients:

4 cups caster sugar

4 tablespoons lemon juice
Tips:
·
Use fresh strawberries.
·
Only use jars that have been thoroughly washed then
sterilised with boiling water.
·
Use good quality jars with secure lids.
Method:
1. In a pot, crush strawberries with a potato masher.
2. Add sugar and lemon juice.
3. Stir over low heat until the sugar is dissolved. Increase to high heat
and bring the mixture to a rolling boil. Using a digital thermometer, stir until
the mixture reaches 105C/ 221F.
4. Transfer to hot sterile jars but be sure to leave about 1cm/half an inch
headspace. Seal, then immediately tip jar upside down. When you hear the “pop”
sound, your jam jar is now airtight and can be stored in the fridge for several
months.
5. Refrigerate and enjoy.
