Mussels in White Wine
I love fish and seafood. I think it's because I love the sea. Nothing quite says "relaxed" like a table overlooking the beach and a plate of paella or calamari with a creamy dip. Can you hear my stomach rumbling as I write?


One of my favorite seafood meals recently wasn’t in a Spanish taverna. It was a cold February evening on the banks of the River Dee in Cheshire, England with the lights of North Wales twinkling in the distance.

The first course (shared between two) was a huge bowl of mussels in a white wine sauce, served with chunks of crusty bread.

Round two was a seafood platter featuring lobster, prawns, smoked salmon, deep fried fish, calamari, and whitebait. It was delicious!

The inclusion of whitebait reminded me how much I love those tasty little fish, so I thought I’d share a quick and easy recipe with you.



Whitebait with Dill Mayo     
Serves 6
Seafood Platter

Ingredients
2 teaspoons fennel seeds

50 g plain flour
450 g whitebait
a few sprigs of fresh dill
2 tablespoons mayonnaise
1 lemon

Method
Heat the oil in a deep fryer or pan to 200ºC.
Crush the fennel seeds in a pestle and mortar, then combine with the flour and season.
Working in batches, coat the fish in the flour mixture then very carefully fry for 3 minutes, or until golden and cooked. Remove with a slotted spoon and drain on kitchen paper.
Pick and finely chop the dill, then combine with the mayonnaise, and season.
Serve the fish with dill mayo and lemon wedges.

  2. I grew up in Redondo Beach, California and we used to go to the pier all the time and get fresh seafood. I love seafood too.

  3. I think the whitebait we get here, and the whitebait you're talking about must be different because there's no way you could cook the whitebait we get here individually. We make them into fritters because they're more like tiny tadpoles.

  8. As hard as I've tried, I've never been a fan of seafood. It's probably due to the fact that I grew up in suburbia between mountains with no ocean access. Fish were always disgusting to me. The only seafood I thought was okay was halibut straight from Alaska.

  9. It's so ironic that I'm from Maryland, which is considered seafood capital, and despite it being so healthy, it's not my favorite food. Occasionally I'll eat shrimp and fish, and will definitely try your recipe the next time I prepare a fish meal for sure. I also like a crab cake about once a year too. (lol) Your book sounds pretty interesting, and I love a good mystery. Hugs...RO
