Cooking with Dani Collins & Giveaway!

This is a recipe that Cinnia, from His Mistress With Two Secrets, would never make. She’s allergic to strawberries. But I often make variations of it in the summer.

I first ate this salad about twenty years ago. It felt very exotic at the time. My husband’s Aunty Sharon made it for a family picnic. When I asked her for the recipe, she wrote it out on this pretty little card, which seems a delightfully quaint custom now. Everything is email and texting these days, isn’t it? In fact, I rarely ask people for recipes any more. It’s all online. Just today, I searched a recipe for ‘the perfect roast beef’ and scribbled out some notes for a Yorkshire pudding, even though I have my mom’s never-fail tucked away somewhere. Side note: I have never, ever perfected Yorkshires.

I love this salad, though. It’s light and tangy and is pretty hard to get wrong. I’ve made it so often, I make variations off the top of my head. Don’t have strawberries? Chop up an orange or even use canned mandarins. No poppy seeds? Try sunflower seeds. In fact, if you’re not a fan of spinach, use any mixed greens you have on hand.

Enjoy!

  2. That looks wonderful. Next summer when strawberries are prolific again I will have to make it.
Each year at Christmas I make my mother's shortbread and as the scent of cinnamon and vanilla fills the house I think of her...

  4. Yes! Thankyou for sharing the recipe....
One tiny thing though....I would drop the
    'white sugar' from the dressing!
It would react with the vinegar, and,
    possibly curdle...!

    1. I don't always use the sugar, but I've never noticed that happening. Good tip, though! You really don't need it. The berries are usually sweetness enough. :)

  6. I've never added fruit to my salad before but that sounds really good. I would have to say that the taco recipe my mom and dad used to use when I was a kid and now my brother and I use would be my favorite recipe. My family even asked me to make tacos for Thanksgiving a couple of times. The way we do it is to put hamburger on half of a corn tortilla and fry it until the tortilla gets soft and then fold it in half to form a shell for the taco. Then add all the ingredients to make the taco. They're so good. I'd love to win the book since she's a new to me author. :) miztik_rose@yahoo.com
