Me Go Mango Guacamole by Mickey J. Corrigan


There are a handful of recipes included in my new romance anthology, Me Go Mango. Here's one of them, a favorite of mine for cocktail hour or baseball game snacking.


Me Go Mango Guacamole
(serves 2)

1 large ripe mango, peeled, pitted, and diced
1 large ripe avocado, peeled and mashed
1 lemon, quartered
1 large ripe tomato or several small ones, chopped
1 tsp. salt
½ tsp. black pepper
sour cream
2 sprigs of cilantro
blue corn chips

1. In a stainless steel bowl, combine the mango with mashed avocado. Squeeze lemon juice over all to curtail browning.

2. Add tomato and seasonings, mix gently.

3. Heap into 2 mounds on a bed of shredded lettuce or a nice serving platter.

4. Add a dollop of sour cream and a sprig of cilantro to each mound. Surround with chips, and serve.
