Dani Collin’s Favorite Gingersnaps Recipe - Aka ‘Reindeer Poops’


Best Ever Sugar Cookies –
 
This recipe is from my mother-in-law. It was my husband’s favorite (after shortbread.) We used it for years with our kids.
The cookies pictured are actual cookies baked and decorated by my daughter and son before they both left home.
We’re empty-nesters now, but they’ll be home for the holidays. And this year, my niece and nephew will be visiting from Australia. They’re 5 and 7. We’ll be digging up the cookie cutters and decorating nibs. I can’t wait!

Gingersnaps – also known as Reindeer Poops



Cream together:

1 c. butter or margarine
1 ½ c. white sugar

Add:

2 beaten eggs
1 c. molasses

In a separate bowl, sift together:

4 c. flour
1 tbsp baking soda
1 tsp baking powder
1 tsp nutmeg
1 tsp cinnamon
1 tsp cloves
1 tsp all spice

Stir dry ingredients into molasses mixture.
Roll a small amount into a approx. 1” (2.5 cm)
Dip one side of ball into a bowl of white sugar, then set it sugar side up on a greased cookie sheet. (Or use parchment paper.)
DO NOT PRESS. Cookies will flatten while cooking to a nice circle.

Bake at 350F for approx. 15 minutes. They will crack on top when they are done and the sugar will sparkle. Cool on a wire rack. Try not to eat in one sitting. Yum!



It’s always a toss-up for me whether I prefer shortbread or gingersnaps. I’ve never found the prefect shortbread recipe, but this particular Gingersnap recipe has been my favorite for about twenty years.
When the kids were little, we made them every year and they loved it when I called them reindeer poops. That’s only when they’re raw. Once cooked, they’re so pretty, they look like bought cookies.
