|Mussels in White Wine|
I love fish and seafood. I think it's because I love the sea. Nothing quite says "relaxed" like a table overlooking the beach and a plate of paella or calamari with a creamy dip. Can you hear my stomach rumbling as I write?
One of my favorite seafood meals recently wasn’t in a Spanish taverna. It was a cold February evening on the banks of the River Dee in Cheshire, England with the lights of North Wales twinkling in the distance.
The first course (shared between two) was a huge bowl of mussels in a white wine sauce, served with chunks of crusty bread.
Round two was a seafood platter featuring lobster, prawns, smoked salmon, deep fried fish, calamari, and whitebait. It was delicious!
The inclusion of whitebait reminded me how much I love those tasty little fish, so I thought I’d share a quick and easy recipe with you.
Whitebait with Dill Mayo
2 teaspoons fennel seeds
50 g plain flour
450 g whitebait
a few sprigs of fresh dill
2 tablespoons mayonnaise
Heat the oil in a deep fryer or pan to 200ºC.
Crush the fennel seeds in a pestle and mortar, then combine with the flour and season.
Working in batches, coat the fish in the flour mixture then very carefully fry for 3 minutes, or until golden and cooked. Remove with a slotted spoon and drain on kitchen paper.
Pick and finely chop the dill, then combine with the mayonnaise, and season.
Serve the fish with dill mayo and lemon wedges.
