Gluten Free Pancakes with Pippa Roscoe


It’s no secret that I LOVE my food. I spent an amazing six weeks in New York last summer indulging in some incredible meals and increasing my waste line! It was then, that I fell in love with American pancakes. So when I was diagnosed as yeast and gluten intolerant I was distraught. But I found a FABULOUS, simple and quick recipe for gluten free pancakes and I now ‘indulge’ whenever I feel like treating myself. (Which is fairly often, I have to say!)
·                     125g gluten free flour
·                     1/2 teaspoon gluten free baking powder
·                     1/2 teaspoon salt
·                     1/2 teaspoon cinnamon
·                     1 teaspoon vanilla extract
·                     1 egg
·                     1 tablespoon vegetable or olive oil
·                     120ml cold milk (or as needed)

Mix all the dry ingredients together, then add all the wet ingredients, heat up some oil in a frying pan and pour on a couple of heaped tablespoons of your mixture and fry for about 30 seconds on each side, for a delicious, light and utterly pleasurable pancake! 

I have mine with honey and banana, or strawberries and blueberries, and sometimes I add some chopped pecans into the batter just before frying. Enjoy!!

  5. Yum! I love pancakes. To make them even more fluffy, try separating the egg and whipping the white. Fold it in as the last thing you do before cooking.

  12. Those pancakes look delicious. I like that they are good for people who have trouble with gluten. Sometimes it's hard to find tasty recipes that are gluten-free.
