Weetbix Slice with Michelle Douglas





My family tease me because whenever we get together—whether it’s for a barbeque or a quick coffee catch up—I always bring along a homemade cake, slice or biscuits. Mind you, while they tease me they’re also more than happy to eat whatever sweet treat I’ve brought along (and usually more than one slice!). J The one I’m sharing with you today is a perennial favourite (my little brother requests this one constantly). Which is great as it’s so easy to make!

Ingredients:
·        5 Weetbix
·        1 ½ cups Plain Flour
·        2 teaspoons Baking Powder
·        2 teaspoons Cocoa
·        ¾ cup Desiccated Coconut
·        1 cup sugar
·        1 tablespoon of Golden Syrup
·        200gms Butter
·        Splash of vanilla essence

Method:
Crush the Weetbix into a bowl and add the flour, baking powder, cocoa and coconut. Combine thoroughly. In a saucepan melt the butter, sugar, golden syrup, and vanilla essence. Mix this into the dry ingredients before pressing into a tin lined with baking powder. Bake at 180C for 15 minutes. Cool and ice with chocolate icing.


For chocolate icing: Sift a cup of icing sugar with 2 tablespoons of cocoa. Add 2 teaspoons of soft butter and a few drops of vanilla essence. Pour in 1 tablespoon of boiling water and beat well. Spread over the cooled slice, sprinkle with coconut (or coloured sprinkles) and leave to set.

Oh, and the final instruction is to enjoy, of course! I hope you and your loved ones enjoy this as much as my family and I have! J
