The Most Delicious and (shhh!) Easy Lemon Shortbread Biscuits

Welcome to one of the simplest recipes I know. And it’s also one of the yummiest! Whenever I make these little biscuits (cookies) they disappear in no time. They’re perfect with tea or coffee but children love them too.

With only four ingredients and no need even to prepare the baking tin, it has to be easy!

Lemon Shortbreads

250 g (8 0z) butter
Grated rind of one lemon
1 cup icing sugar, sifted (in Australia I use icing sugar mixture)

2 cups plain flour, sifted

1.       Beat the butter and lemon rind till creamy then add icing sugar and beat well. Stir in the sifted flour.
2.       Take level teaspoons (yes, teaspoons, these are meant to be small) of the mix and roll lightly into balls (a great job for the children). Place on ungreased baking trays and press down with the fork which has been dipped in cold water so it won’t stick.
3.       Bake in a moderate oven (180 C, 350F) for 10-12 mins or until very slightly coloured (just a tinge of colour, not brown!). Cool and store in an airtight tin. Makes about 4 dozen.

I’ve had this recipe so long I don’t recall where I found it. It’s been tried and tested over many years and I can tell you these are terrific with a hot or cold drink and a good book. If you try them and like them, I’d love to hear!
